A homage to fromage

A priori, if we had to place the raclette on the scale of the most sexy and refined dishes, it would not even come within pole position. Because of all the melted cheese, the smell of butter and cream floats in the air in a confined space with its starched tablecloths and nano-portions, it typically scores less.

But that was before we tasted the ultra-smooth Swiss gruyère from Café du Cerf in Rougemont.

The Café du Cerf is distinguished by its warm decor of carved wood, with its imposing hunting trophies hanging on the walls, so typical of Switzerland. So, sit down in the  "bottom alcove" - ask to be placed there if you’re in small party. Finally, ready to order, serious things are about to begin.

In reality, it is rather simple; Cafe au Cerf is for cheese fans, the real ones. So, with an exceptional representative, the choice is made quickly: it will be the raclette with Swiss gruyère, with an aperitif of thin slices of Grisons meat. Once the raclette platter is placed on the table, it is every man for himself, and the fight can become fierce. Everyone uses their tastes and appetites (needless to say, we’re hanging in there), and drag the melted cheese onto hot little potatoes - pro tip, avoid overdoing it with the potatoes (eat with caution) at the risk of having to forfeit after only 3 or 4 rounds.

And, if you’re more of a bread person than potatoes, then don’t hesitate to opt for the fondue. After that, no dessert, but you can leave with one of the sublime peppers on the tables, which are usually for sale.

Needless to say, such a meal will make you melt with pleasure ... Sorry, we had to.
