Now a firm fixture in the minds of all residents of Monaco, the COYA Monte-Carlo experience is centred around the carefully orchestrated cuisine of chef Fabrizio Fossati and the inimitable eclectic and electric atmosphere of the place, set against the backdrop of the Mediterranean. This winning formula is set to be further enhanced in 2020 following the chef\u2019s visit to Peru over the winter and sous-chef Victoria Vallenilla's trip to Vietnam. Both returned from their travels with a whole host of new flavours to recreate\u00a0in their specials, which will be updated on a weekly basis and served in addition to the main menu.
