You have arrived at a place where New Yorkers go to be transported to the kitchens of Kyoto without ever leaving their beloved island, and also while remaining up-to-date with contemporary movements like health consciousness (to New York it’s contemporary).

So the red flag is raised, and its door opens into a spacious walk-in closet--sorry--an intimate but confined space so typical to the saturated city. It’s nice to find a seat in the back--not for discretion per se, but to avoid the draft, as the door frequently swings open on busy Saturday nights.

With each Konnichiwa (Good day) remember to give a friendly Ossu (Hi), and relax, you’re still in New York. Celebrated for its authenticity, we particularly love it for its wonderful service and homemade udon noodles, known to be the best in the city and forecasted to replace the ramen fad. Leave it to the open-mindedness of New Yorkers and the expertise of Chef Norio Shinohara to cultivate the next gastronomic trend.

Some call his petite plates, which masterfully coordinate bright colors, works of art, but you should refer to it as dinā (aka dinner): a combination of quail eggs marinated in miso, salmon carved into lovely roses (we couldn’t have made that up) and of course the basics, sushi and sashimi. To match the salty with sweet, all fall head over heels for the strawberry custard. And to drink it’s sake--what else did you expect?

In the end, there is only one conclusion: This red flag is a good omen.
