COYA: fusion cuisine descends on Monaco

It's the formula that has been shaking up Monaco’s summer season since 2018: COYA combines the flavours and colours of Peru and Asia at what has become the principality’s benchmark in fusion cuisine.

MONACO – Following the success of its first two seasons, COYA is once again this year offering that special combination on which it has established its reputation from London to the Riviera via Miami, Dubai and Abu Dhabi - light and colourful fusion cuisine, a bar & lounge that are both hip and welcoming in equal measure and pulsating DJ sets, with the added bonus of its extraordinary location on the Larvotto peninsula, just above Jimmy'z.

Now a firm fixture in the minds of all residents of Monaco, the COYA Monte-Carlo experience is centred around the carefully orchestrated cuisine of chef Fabrizio Fossati and the inimitable eclectic and electric atmosphere of the place, set against the backdrop of the Mediterranean. This winning formula is set to be further enhanced in 2020 following the chef’s visit to Peru over the winter and sous-chef Victoria Vallenilla's trip to Vietnam. Both returned from their travels with a whole host of new flavours to recreate in their specials, which will be updated on a weekly basis and served in addition to the main menu. The traditional dishes served here are sure to whet your appetite for travel, and feature more pronounced tastes this summer thanks to a subtle blend of new spices and surprising ingredients.

Once tried and tested, the best of these new specials will make it onto the main COYA Monte-Carlo menu, and may even be served at all COYA restaurants around the world, as was the case with the Piňa Colada & Chicha Morada Sundae desserts, created by pastry chef Jessica Negrisoli at COYA Monte-Carlo and now featured on every COYA menu in the world!
